Easy cheesy rice

Some nights I don’t have much left in the tank and just want a simple-to-throw-together dinner.
This easy cheesy rice recipe ticks all the boxes: just open a few cans, add rice, spices and stir. Bring to a simmer, cover, and let it cook while you relax for 20 minutes.
Stir through some cheese, and dinner is ready to go!

A delicious easy, cheesy, one-pot rice dinner, that can be ready is just 30 minutes!

  1. Put all your ingredients (except the cheese) into a large saucepan (it will also need a lid.)
  2. Stir, then bring to the boil. Reduce the heat to a simmer, cover and cook for 20 mins, or until the rice is cooked.
  3. Stir through the grated cheese and that’s it.

To serve

  1. If I am feeling fancy, I’ll squeeze over fresh lime juice, drizzle with evoo, and scatter with fresh coriander just before serving. Tonight we had ours with corn chips, fresh lemony yoghurt, jalapeno and sliced avocado on the side, but it’s also really good on its own.
