Years ago, when I still lived in Wellington, Lisa told me about her Dad's stunning pumpkin soup, which features peanut butter as the special ingredient.

I was really curious because I couldn't imagine how peanut butter would taste in pumpkin soup, but Rob sent his recipe, and just wow. So much flavour!
Honestly, it made me wonder why I had wasted most of my life eating mediocre pumpkin soups. A creamy pumpkin soup is nice, but this soup was a revelation, and is now my favourite pumpkin soup recipe.

Sadly, Rob is no longer with us and is deeply, deeply missed.
I never got to meet the kitchen wizard, legendary runner and cherished dad behind the recipe, but I am endlessly grateful that he so generously shared it.

Thank you, Rob, for teaching me something new, and yes, peanut butter does belong in pumpkin soup!

Note: In keeping with the spirit of Rob's recipe, I have included his measurements and original instructions below. This really is one of those 'measure with your heart' recipes and it didn't feel right to change that.

  1. Slowly cook the onion, garlic and ginger in a large pot for a few minutes until soft, not brown.
  2. Add chopped pumpkin, kūmara (or potato,) water (or stock,) chilli paste, fresh chilli and turmeric. Simmer until the vegetables are tender.
  3. At this stage, add the peanut butter, oyster sauce, soy sauce, and coconut milk, and stir well.
  4. If you have an immersion blender, gently blend the soup. (If you don't, you will need to cool the soup before putting it through the blender.)
  5. Taste for seasoning and add salt at this stage, along with pepper.
  6. Rob's recipe doesn't say this, but I like to top my soup with extra coconut milk (or coconut cream,) fresh coriander, chilli crisp, and crunchy pumpkin seeds.
    It's so good!
