These vibrant little bites turn leftover rice into the tastiest green ‘muffins.’
Bursting with spinach, peas, coriander and rice, they are anything but boring!
Spinach rice bites

My teen son said these were 'ok,' as he reached for a second.
If you know teen boys, that is the highest praise possible, and high praise indeed for what is essentially a green muffin!

Preheat the oven to 160°C (fanbake.)

Grease a 12-hole muffin tin (or line with muffin cases.)

Blend together the milk, eggs, spinach and coriander until smooth.

Add rice, breadcrumbs, onion, celery, cumin, salt, oil, peas and cheese into a large bowl and mix until well combined.

Pour over the blended spinach mixture and stir until thoroughly mixed.

Divide the mixture evenly between the muffin holes.

Stir together the pumpkin, chia and sesame seeds in a small bowl, then spoon over the top of each muffin.

Top each muffin with a slice of jalapeño.

Bake in the preheated oven for 30 minutes, or until set and cooked through.
