Deliciously light and cheesy with hints of chives and pops of tangy pickle, these are amazing hot out of the oven spread with butter, or dipped in my easy tomato soup.

Chive & pickle cheese puffs
Description
These delightful cheese puffs are so good that you will be making them on repeat.
I also think they would be great with coriander and jalapeño, if you were after a spicier twist!

Preheat oven to 180°C fan bake, and line or grease a baking sheet.

Whisk together the egg and milk in a small bowl.

Sift the flour, cayenne, mustard powder and baking powder into a medium-sized bowl, then add salt and whisk the dry ingredients well.

Add grated cheese and stir to coat in the flour mixture, pour in the egg and milk, followed by the pickles and chives.

Gently stir with a knife until just combined. You don't want to overmix here!

Drop large spoonfuls of the mixture onto the prepared tray (you should get 8 altogether.)

Bake for 10-15 minutes or until they are golden and cooked through.
