Creamy sausage pasta

This quick creamy pasta sauce was dreamed up by my daughter and uses sausages for an instant flavour boost. Topped with cheese and fresh chives, this is a truly dreamy dinner bowl!

  1. Heat the oil in a large frying pan over a medium heat, then add the onions and salt. Cook until the onions have softened but not coloured. Add a splash of water if necessary to keep them from sticking.
  2. Remove onions from pan and set aside.
  3. Heat another glug of oil in the same pan, then add the sausages, crumbling as they cook. Cook until well browned, then stir in the garlic and thyme, and cook for another minute or two.

  4. Start cooking the fettucine according to package instructions.
  5. Add the stock to the browned sausages, stirring well. Allow to simmer over a low heat until reduced slightly.

  6. Return the onions to the pan, along with the cream, cheese and chives, stirring constantly until the cheese has melted and the sauce is well-combined.
  7. Add the drained pasta to the sauce and toss to mix. If the sauce is too thick, add a splash or two of the pasta cooking water to thin to the desired consistency.
  8. Divide into bowls and top with extra cheese and chives.
  9. Enjoy x
