Today I felt like a comforting old classic; leek r Today I felt like a comforting old classic; leek risotto.
 Risotto is one of those meals that just always hits the spot and is so easy to throw together too.

I find it quite meditative to gently stir the grains, adding a ladleful of stock every time it starts to look dry.

Tonight’s version included sautéed leek, mushrooms, crispy bacon, parsley, butter and freshly cracked black pepper. Comforting, tasty and just what I felt like on a chilly Friday evening.

Next time I would pan-fry the mushies and fold them through at the end, but other than that, I wouldn't change a thing.

My kitchen isn’t fancy. It has a tiny benchtop, ol My kitchen isn’t fancy. It has a tiny benchtop, old wooden cupboards and nowhere near enough storage.

But this is a space where generations of families have baked birthday cakes, shared dinner, stirred pots of soup and licked mixing spoons.

My children can easily reach the benchtop now. They can slice and mix and cook without me, and one day it might be their children helping make cookies at the same kitchen bench.

This is my kitchen. It's dated and it isn’t perfectly photogenic, but it doesn't need to be. 
As long as meals are made and shared here, it truly is the heart of my home.

Days off are made for lazy, easy one-dish meals. Today’s lunch was an airfried packet of frozen curry puffs topped with salted limey yoghurt, date chutney, coriander chutney, coriander, tomatoes, nylon sev and chaat masala.
This looked and tasted like an impressive plate, but really was the work of just a few moments.

I whipped up a batch of these to go in lunchboxes for the week, but they were such a hit that they didn't even last the day. Really easy and super delicious.
2️⃣ Speculaas
These delicately spiced, lightly caramelised, crunchy biscuits are highly requested in my house. The recipe makes a big batch, so I froze a log last time I made it, ready for slicing a baking today. So good!
