Whip up a batch of this delicious coconut blueberry porridge mix for a quick breakfast whenever you need it.
With a hint of sweetness, pops of dried blueberries and seeds, and a creamy coconutty finish, you’ll have something to look forward to on these chilly mornings.
One batch of this will keep for ages in the pantry, and sort your breakfasts for weeks; just mix with water, microwave and serve!
Blueberry coconut porridge mix
Description
If you've been following me for a while, you will know that I quit energy drinks last year after many years of relying on them as my morning pick-me-up.
I was never a breakfast-eater, but without the morning energy drink hit, I found I couldn't get by without it.
In the summer months, I enjoyed my homemade muesli, but these cold mornings have me reaching for a different kind of breakfast; one that warms you gently from the inside out and keeps you full for longer.
This version uses coconut milk powder (I like the flavour,) which helps it stay creamy even if you aren't serving it with milk. You can use regular milk powder, or just leave it out if you prefer.

Preheat oven to 160°C (fanbake.)

Combine the sliced almonds, linseeds, sesame seeds and coconut flakes in a shallow roasting dish. Bake in the oven, stirring every 3-5 minutes, until evenly toasted. (Mine took 13 minutes altogether.) Watch carefully so they do not burn.

Set aside to cool.
Assemble the porridge mix

Add the rolled oats, sugar, milk powder, vanilla seeds and salt into your food processer or blender. Add the cooled nuts and seeds, then pulse a few times to combine.
(The aim is to mix well, but to retain some texture.) -
Mix in the dried blueberries, then pour into an airtight jar. (You can also add the vanilla pod to the jar to further infuse that vanilla flavour into the mix, but remember to remove it before cooking.) Use within a month.
To serve

To make porridge, combine 1/3 cup of the mix with 1/2 cup of water in a microwave-safe bowl. Microwave for between 90 seconds and two minutes (exact timing will depend on your microwave.)

Serve with extra milk (if desired,) and your choice of porridge topping.
