Sometimes the unlikeliest of ingredients combine in a way that creates something truly special, and this zucchini slice is one such example.
I think this slice was originally created to find a way to use up zucchini, when you end up with that inevitable glut of fresh green produce in the height of summer, and lots of you will already have a recipe for it.
If you don’t, though, or if you have never tried it, this dish is something really special that will quickly find the way into your heart.

Combine the zucchini, eggs, onion, bacon (or sundried tomatoes,) thyme, s+p and oil in a large bowl until the eggs are incorporated, then add the flour and mix well.

Pour into a greased 20-25cm (9-10 inch) oven-safe round dish and top with grated cheese and a sprinkle of pumpkin seeds (if using.)

Fan bake at 165C°C for 35-45 minutes, or until cooked in the centre.
