Lisa's microwave fudge

There are some recipes you just keep coming back to. The recipes that, once you’ve tried them, there is no going back. This fudge recipe is like that- sweet, perfectly crumbly and, well, just perfect.

Lisa’s microwave fudge

Description

A workmate of mine brought an unassuming bowl of fudge into the office to share, and let me tell you, that fudge did not stand a chance.
This was a beautiful homemade fudge. It wasn’t cut into magazine-perfect smooth squares, but it was perfectly sweet, perfectly crumbly and, well, just perfect.

Not only that, but it also takes less than ten minutes to throw together in the microwave, and I get rave reviews wherever I take it.
It’s also a lifesaver when you need bring a plate of food to school, and perfect for gifting all year around.

Lisa was given this recipe from a friend, who was given it by a friend, so I don’t know where it originated, but in my mind it will always be her fudge, so here is the recipe:

  1. Line a sandwich tin with baking paper and set aside (the tin I used was approx 27 x 21 cm, or 10.5 x 8 inches.)
  2. In a microwave-safe bowl, combine the butter, sugar and condensed milk.
  3. Microwave on high for 3 minutes, then stir well. (Timings are based on my 1000W microwave.)
  4. Microwave for another 3 minutes, then stir again.
  5. Microwave for a final 2 minutes 30 seconds, then stir again. Add the vanilla extract and mix well.
  6. Add the chocolate and stir until fully incorporated.
  7. Pour the fudge into the prepared dish and smooth the top with a spatula. I like to score the fudge at this stage to help it break into tidier squares later, but part of the charm of this fudge is that it is homemade, and we want it to look homemade, so don’t stress if your lines aren’t perfect. Mine definitely aren’t!
  8. Allow the fudge to cool before slicing.
