Chocolate cookies

These are the chocolate cookies that my kids dream about.
They look just like a homemade cookie should: nice and thick with a soft, almost cakey interior and gooey chocolate morsels.
The golden syrup gives them hint of that deep caramelly flavour, reminiscent of the best of Nana’s baking.

  1. Preheat your oven to 180°C fan bake.
  2. Mix together the butter and golden syrup in a large mixing bowl.
  3. Stir in sugar and mix well. Then mix in the sifted cocoa, and lastly stir in the egg.
  4. Add the self-raising flour and mix well. It will seem like the mixture is too dry, but keep mixing until it is fully incorporated and the dough comes together.
  5. Lastly add the chopped chocolate, and stir to ensure it is evenly distributed.
  6. Roll generous tablespoon-sized cookies (you should get 18-20 from this batch.) Transfer the balls to a lined tray and press the top down gently with a fork.
  7. (These are homemade cookies and we want them to look homemade!)
  8. Bake in the preheated oven for 9-12 minutes, or until cooked to your liking.
  9. Cool on a wire rack and enjoy.
  10. The cookies are wonderful while still warm (just watch out for hot melted chocolate,) or eaten cold from the tin (if they last that long!)
